Recipe: Chicken Cottage Pie

  Chicken Cottage Pie First of all chop two small onions and gently fry until semi translucent, in to that add some garlic (granules or minced or chopped - your choice) along with a little pepper and salt, then add your minced chicken (you can use turkey if you want).  Gently fry until the mince has cooked through, then add a small tin of sweetcorn and about half an egg cup full of light soy sauce. Mix through and then put the mixture in to a casserole dish. Now for the mashed potatoes, you can do this from scratch or buy ready mashed. You can use sweet potatoes or ordinary potatoes if you wish, in to the mash add some soft cheese, I used garlic and herb, mix this through the mash and spoon on top of the mince. Cook in the oven for and hour or so on gas mark 7, or equivalent. Serve with peas or maybe peas and carrots mixed. Let me know what you think of this dish.

Recipe: Prawn & Tomato Pasta

Prawn & Tomato Pasta  (inspired by a Nigella dish) First of all cook some pasta in a pan While it's cooking in another pan pour some olive oil. Cut come cherry tomatoes around the equator, add these to the hot oil, taking care as they will spit! Add some grated garlic and some salt, when Nigella did her version of the dish she added chilli flakes, but I'm not a fan, so I'm choosing to add a squirt of ginger paste for a warming taste. In the pan next add your peeled uncooked prawns, cook them until they have turned pink.  Strain your pasta, and add it to the other pan, along with some chives and parsley. Combine, serve and enjoy. Recipe: Minced Beef & Tomato

Minced Beef & Tomato In this one I have used a double helping of tomato  First of all I gently fry my herbs and spices Salt Pepper Chives Fennel seeds  Cumin seeds Herbs De Provencal You can use whatever ones you wish to use. Once lightly fried, add some chopped onion and thinly sliced garlic. Make sure you mix these well with your herbs and spices. Add about a coffee cup (third of a mug) of water, then throw in your sweet potato and carrot. Stir in and bring to the boil, then turn heat down and simmer for about 10 to 15 minutes. Chopped Onion Thinly Sliced Garlic Diced Sweet Potato Diced Carrott Minced Beef Chopped cherry tomatoes Tin chopped tomatoes The next thing to do as soon as your veg starts to soften is add in your minced beef, stir this in well, keep turning until the beef has browned and then add your chopped cherry tomatoes and a tin of chopped tomatoes. I feel all itchy reading this..... Pic: Asian Tiger Mosquito Ok, what is this, it's like we are living in biblical times, first we get a virus, now it's time for a plague!... Brits are being told to keep their windows closed as the country is braced to be invaded by a host of disease carrying bugs. The Mirror reports that mosquitoes carrying deadly viruses such as Zika are believed to be entering the UK and could be circulating already, health experts have warned. This is because the warmer weather, combined with recent and upcoming thunderstorms, create the ideal breeding grounds for them. The latest advice is that we should be keeping all of our windows closed and even load up on the garlic breath. Coconut oil could help reduce being bitten or sooth any bites.
